"Sneaky" Turkey Meatballs!

Its the first of the year and everyone is on their kick to "eat healthier" right? Awesome! Butttt then you realize you have those "picky" eaters in the household. Now, you struggle with finding recipes that are healthier, yet they'll actually eat. This recipe is perfect for those picky eaters! This was a hit for us and has been requested as a repeat meal. The recipe below is super quick and easy to make! I hope you enjoy!


Ingredients:


1/4 head cauliflower, broken into florets

1/2 cup finely shredded cabbage (note, I don't put this in mine)

1 tablespoon potato starch or cornstarch

1 tablespoon balsamic vinegar

1 teaspoon sea salt

1 teaspoon dried basil

1/2 teaspoon pepper

1lbs ground turkey


Cooking Instructions:

  • Preheat oven to 400°.

  • Place cauliflower in a food processor; pulse until finely chopped. Transfer to a large bowl. Add the cabbage, potato starch, vinegar, salt, basil and pepper.

  • Add turkey; mix lightly but thoroughly. With an ice cream scoop or with wet hands, shape into 1 1/2-in. balls.

  • Place meatballs on a Pampered Chef baking stone. Bake 20-24 minutes or until cooked through.

Garnishment:

  • If desired, toss with barbecue (or other) sauce and top with sesame seeds or basil

  • Serve over rice
