You Say Potato, I say Potahto

Nothing fills your tummy more than a good ole starch side dish! Starches are great additions to any meal and lets be honest, everyone loves them! Potatoes are one of my favorite additions to most meals. Mashed potatoes made in the InstaPot are my favorite starchy side dish and an easy go to! I honestly don't make mashed potatoes any other way now. It's quick and easy and the result is always perfect. You will find throughout a lot of my recipes and dishes that I share, I utilize my InstaPot a lot.
Prep Time: 5 minutes
Total Cook Time: 20 minutes
Ingredients:
3lbs potatoes (I usually go with red potatoes)
3/4 cup sour cream
1 cup heavy whipping cream
1 cups chicken broth
4 tablespoons butter
Salt and pepper to taste
Optional: 1 teaspoon garlic powder
Cooking Instructions:
Cut potatoes in to cubes (I live the skin on but that is optional).
Place chicken broth in bottom of InstaPot.
Place potatoes in the InstaPot.
Secure lid, ensuring steam valve is closed.
Cook on high pressure for 10 minutes.
After the 10 minutes, open steam valve and quick release the steam.
Drain excess chicken broth from potatoes.
Add butter, sour cream, heavy whipping cream and salt/pepper to InstaPot and mix with hand mixer.
