Zero Carb Chicken Nuggets, Oh My!

One of our favorite things in our household is Chik Fil A chicken nuggets. However, there are sooooo many calories in them and they are DEEP FRIED. We needed an alternative to continue to eat what we love, but in a healthier way. Don't judge me, but I'm always finding things to try on Tik Tok. I stumbled across a Tik Tok video using pork rinds as the breading. SAY WHAT! Yep, and its actually REALLY GOOD!



Ingredients:

4 chicken breast

1 egg

1 bag of pork rinds

1/4 teaspoon salt

1/4 teaspoon pepper

1/4 teaspoon garlic powder


Cooking Instructions:

  1. Take your chicken breast and cut into cubes which your Pampered Chef coated chefs knife (you could do strips if you prefer).

  2. Season chicken with salt and pepper.

  3. Put pork rinds in the food processor and ground very fine.

  4. Season pork rind crumbs with garlic powder and pepper.

  5. Whip your egg in a bowl. Dip chicken in the egg.

  6. Take egg dipped chicken and cover in pork rind breading.

  7. Place in Pampered Chef Airfryer on 400 degrees for 12-15 min.

Garnish:

  • Toss in choice of sauce (I did hot sauce)
